Diabetic-Friendly Apple Fennel Soup

A warm and comforting soup made with the sweet notes of apple and the aromatic crunch of fennel, perfect for health-conscious foodies.

  • 1 fennel bulb, chopped
  • 1 apple, chopped
  • 1 onion, chopped
  • 4 cups vegetable broth
  • 1 tbsp olive oil
  • Salt and pepper, to taste

Instructions

  1. Prep your veggies by chopping fennel, apple, and onion into bite-sized pieces.
  2. Sauté the chopped onion and fennel in olive oil over medium heat for 5-7 minutes until soft.
  3. Add the chopped apple and let it cook for an additional 2-3 minutes.
  4. Pour in the vegetable broth, scrape any bits from the bottom, and bring to a boil, then simmer for 20-25 minutes.
  5. Blend the soup until smooth and creamy using an immersion blender or a stand blender.
  6. Season the blended soup with salt and pepper to taste.
  7. Serve warm, garnished with olive oil or pepper, alongside whole grain bread.

Notes

This soup can be made ahead of time and tastes even better the next day. Store in an airtight container in the fridge.
