Dill Pickle Pasta Salad

A delightful and tangy pasta salad that brings the nostalgic flavors of summer gatherings with a refreshing twist.

  • 1 lb Pasta (rotini or shell)
  • 1 cup Dill Pickles (diced)
  • 1 cup Cheddar Cheese (shredded)
  • 1/2 cup Red Onion (finely chopped)
  • 1/4 cup Fresh Dill (chopped)
  • 1 cup Mayonnaise
  • Salt and Pepper (to taste)

Instructions

  1. Cook the pasta: In a large pot, bring salted water to a boil. Add pasta and cook until al dente. Drain and rinse with cold water.
  2. Prep your veggies: Chop the dill pickles, red onion, and fresh dill.
  3. Make the dressing: In a mixing bowl, combine mayonnaise, salt, and pepper. Mix until smooth.
  4. Combine ingredients: Add cooled pasta to the dressing, then stir in pickles, cheddar, red onion, and dill.
  5. Taste and adjust: Add more seasoning or pickle juice to taste if necessary.
  6. Chill: Refrigerate for at least 30 minutes before serving.
  7. Serve it up: Give it a stir before serving and garnish with fresh dill if desired.

Notes

Store leftovers in an airtight container in the fridge for up to 3 days. The salad tastes even better the next day as flavors meld together.
