Easy Caramel Apple Cheesecake

A delightful combination of creamy cheesecake and sweet, spiced apples, evoking warm memories and flavors of fall.

  • 1/2 cup unsalted butter, melted
  • 2 cups cream cheese, softened
  • 1 cup sugar
  • 1 teaspoon vanilla extract
  • 3 large eggs
  • 1 teaspoon ground cinnamon
  • 2 cups diced apples
  • 1 cup caramel sauce
  • 1/2 cup pecans or walnuts, chopped (optional)

Instructions

  1. Preheat your oven to 325°F (160°C).
  2. Combine the graham cracker crumbs and melted butter in a medium bowl. Stir until evenly moistened and press into the bottom of a 9-inch springform pan.
  3. Bake the crust for about 8-10 minutes until golden.
  4. Beat the softened cream cheese in a large bowl until smooth. Gradually add sugar, mixing well.
  5. Stir in vanilla extract, then add eggs one at a time, mixing gently.
  6. Fold in ground cinnamon and diced apples.
  7. Pour the cream cheese mixture over the crust and smooth the top.
  8. Bake for 50-60 minutes until edges are firm and center has a slight jiggle.
  9. Turn off the oven, crack the door, and cool for about an hour.
  10. Refrigerate for at least 4 hours or overnight.
  11. Drizzle caramel sauce over the chilled cheesecake, topping with nuts if desired.
  12. Slice and serve chilled.
