Pumpkin Spice Cookies with Spooky Icing

Delicious pumpkin spice cookies decorated with spooky icing, perfect for Halloween gatherings.

  • 2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1 teaspoon baking powder
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon nutmeg
  • A pinch of salt
  • 1 cup granulated sugar
  • 1/2 cup softened butter
  • 1 cup pumpkin puree
  • 1 large egg
  • 1 cup powdered sugar (for icing)
  • Milk (for icing)
  • Vanilla extract (for icing)
  • Green or orange food coloring (for icing)
  • Candy corn and gummy worms (for decoration)

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Combine the dry ingredients in a bowl: whisk together the flour, baking soda, baking powder, cinnamon, nutmeg, and salt.
  3. Cream the sugar and butter in another bowl until light and fluffy.
  4. Mix in the pumpkin puree and egg until well combined.
  5. Combine the wet and dry mixtures by gradually folding them together.
  6. Scoop dough onto a baking sheet lined with parchment paper and bake for 12-15 minutes.
  7. Prepare the icing by mixing powdered sugar, milk, and vanilla extract with food coloring.
  8. Add gummy worms and candy corn on top of the cooled cookies.

Notes

For a vegan version, use a flax egg and coconut oil instead of butter. Experiment with adding chocolate chips or nuts!
