  • 2 cups Heavy Cream
  • ¾ cup Granulated Sugar, plus more for topping
  • 5 large Egg Yolks
  • 1 teaspoon Vanilla Extract
  • 1 tablespoon Pumpkin Spice

Instructions

  1. Preheat your oven to 325°F (160°C).
  2. Prepare your ramekins in a deep baking dish.
  3. Whisk together the heavy cream and pumpkin purée in a mixing bowl.
  4. In another bowl, whisk the egg yolks, sugar, vanilla, pumpkin spice, and salt.
  5. Mix the pumpkin-cream mixture into the egg-sugar mixture and strain through a fine-mesh sieve.
  6. Pour the custard into the ramekins, then add hot water to the baking dish.
  7. Bake for 30-40 minutes until edges are set.
  8. Cool to room temperature, then refrigerate for at least 4 hours.
  9. Sprinkle an even layer of sugar on top and caramelize with a kitchen torch.
  10. Serve with a dollop of whipped cream or a sprinkle of cinnamon.
