Egg Roll in a Bowl

A delicious, keto-friendly one-skillet dish that combines all the flavors of traditional egg rolls into a simple, nourishing meal without the wrapper.

Ingredients

  • 1 lb ground meat (pork, turkey, or beef)
  • 4 cups shredded green cabbage
  • 1 cup grated or julienned carrots
  • 3 green onions, chopped
  • 2 cloves garlic, minced
  • 1 tbsp fresh ginger, minced
  • 2 tbsp soy sauce or tamari
  • 1 tsp sesame oil
  • Salt, to taste
  • Black pepper, to taste
  • Red pepper flakes (optional, to taste)

Instructions

  1. Brown the meat in a large skillet over medium heat for 5-7 minutes, breaking it up as it cooks.
  2. Add garlic and ginger, stirring for about a minute until fragrant.
  3. Toss in the cabbage and carrots, stirring for about 4-5 minutes until tender.
  4. Pour in soy sauce and sesame oil, stirring for another 2-3 minutes while adding salt and pepper to taste.
  5. Remove from heat and fold in the green onions, reserving some for garnish.

Notes

For meal prep, this dish can be cooled and stored in the fridge for up to four days. It tastes even better the next day!
