Slow Cooker Apple Cider–Braised Short Ribs

A cozy dish featuring melt-in-your-mouth tender short ribs, braised in spiced apple cider for a perfect blend of comfort and flavor.

  • 3 lb beef short ribs
  • 1.5 cups apple cider
  • 2 apples, sliced
  • 1 onion, sliced
  • 2 cloves garlic, minced
  • 1 tsp thyme
  • Salt and pepper to taste

Instructions

  1. Pat your short ribs dry with paper towels and season generously with salt and pepper.
  2. Preheat a few tablespoons of olive oil over medium-high heat and sear the ribs until brown, about 4-5 minutes on each side.
  3. Transfer the seared ribs into your slow cooker.
  4. Sauté the onions in the same skillet until softened, then add the garlic and sauté until fragrant.
  5. Pour the apple cider into the skillet, scraping the bottom, and bring to a simmer.
  6. Add the apple cider mixture over the short ribs in the slow cooker.
  7. Scatter the sliced apples and sprinkle the thyme over the top.
  8. Cover the slow cooker and cook on low for 6-8 hours or high for about 4 hours.
  9. Remove the short ribs gently when done and thicken the sauce if desired.

Notes

Serve over creamy mashed potatoes or polenta, garnished with fresh thyme or parsley.
