Delightful pumpkin cinnamon rolls combining the warmth of spices and the sweetness of freshly baked dough, perfect for autumn.

  • 50 grams (1/4 cup) Granulated Sugar/Caster Sugar
  • 2 tablespoons Butter, browned
  • 1 Large Egg, at room temperature
  • 1 tablespoon Dry Milk Powder
  • 1 teaspoon Salt
  • 5.3 oz (2/3 cup) Pure Pumpkin Puree
  • 1 tablespoon Pumpkin Pie Spice
  • 406 grams – 468 grams (3 1/43 3/4 cups) All-Purpose Flour
  • 150 grams (3/4 cup) Brown Sugar
  • 1 1/2 teaspoons Ground Cinnamon
  • 1 1/2 teaspoons Pumpkin Pie Spice
  • 3 oz (6 tablespoons) Butter, browned
  • 4 oz Cream Cheese, softened
  • 2 oz (1/4 cup) Browned Butter, softened
  • 1 tablespoon Pure Vanilla Extract
  • 2 tablespoons Heavy Cream
  • 180 grams (1 1/2 cups) Confectioners Sugar

Instructions

  1. Activate the Yeast: In a small bowl, combine the warm water and sugar. Sprinkle the yeast on top and let it sit for about 5-10 minutes until it froths.
  2. Mix Wet Ingredients: In a large mixing bowl, add the browned butter, egg, dry milk powder, salt, pumpkin puree, and pumpkin pie spice. Pour in the yeast mixture and whisk.
  3. Add Flour Gradually: Stir in about 2 cups of flour and add more until the dough pulls away from the bowl.
  4. Knead the Dough: Turn the dough onto a floured surface and knead for 5-10 minutes until smooth and elastic.
  5. Let it Rise: Shape into a ball, place in a greased bowl, cover, and let rise until doubled, about 1 hour.
  6. Prepare the Filling: Combine brown sugar, cinnamon, and pumpkin pie spice; mix in melted browned butter.
  7. Roll Out the Dough: After rising, punch down and roll into a rectangle, spread filling mixture over the dough.
  8. Roll and Cut the Dough: Roll tightly into a log, pinch to seal, and slice into 12 pieces.
  9. Second Rise: Let the rolls rise for 30-45 minutes while preheating the oven to 350°F (175°C).
  10. Bake to Perfection: Bake for 25-30 minutes until golden brown.
  11. Make the Frosting: Beat together cream cheese, browned butter, vanilla, and confectioners’ sugar. Add heavy cream to desired consistency.
  12. Frost and Enjoy: Spread frosting over warm rolls and serve.
