Fig Rosemary and Red Wine Jam

A delightful jam blending the sweetness of figs with the earthy notes of rosemary and richness of red wine, perfect for toast, cheese boards, and desserts.

  • 1½ cups fruity red wine (pinot noir, merlot, or burgundy)
  • 3 sprigs fresh rosemary
  • 3 cups chopped black mission figs, stems removed
  • 1 (1.75-ounce) package powdered pectin
  • ¼ cup bottled lemon juice
  • 4 cups granulated sugar

Instructions

  1. Begin by washing your figs. Remove stems and chop them into small pieces.
  2. In a large pot, combine the chopped figs, red wine, and lemon juice. Allow to sit for about 30 minutes.
  3. Place the pot over medium heat and bring to a gentle boil, stirring occasionally.
  4. Add the powdered pectin and rosemary sprigs once the mixture is boiling.
  5. Gradually stir in the granulated sugar, one cup at a time, and bring back to a rolling boil.
  6. To check if your jam is set, drop a spoonful onto a cold plate.
  7. While the mixture cooks, sterilize your jars.
  8. Carefully ladle the hot jam into prepared jars, sealing them tightly.
  9. Allow the jars to cool at room temperature for a few hours.

This jam pairs beautifully with cheeses and can be used in various recipes or enjoyed on its own.
