Deviled Eggs Pasta Salad

A delightful twist on a classic dish, combining the creamy flavors of deviled eggs with comforting pasta.

  • 8 ounces pasta (e.g., elbow or shell pasta)
  • 4 hard-boiled eggs, chopped
  • 1/2 cup mayonnaise
  • 1 tablespoon Dijon mustard
  • 1 tablespoon vinegar
  • 1/4 cup chopped green onions
  • Salt and pepper to taste
  • Paprika for garnish

Instructions

  1. Cook the pasta by boiling a large pot of salted water, add pasta, and cook according to package instructions until al dente.
  2. Prepare the hard-boiled eggs by placing them in a pot of cold water, bringing to a boil, then letting sit covered off the heat for 9-12 minutes.
  3. Mix the dressing by whisking together mayonnaise, Dijon mustard, and vinegar until smooth.
  4. Combine the cooked pasta, chopped hard-boiled eggs, and green onions in a large mixing bowl; pour the dressing over and fold gently.
  5. Chill in the refrigerator for at least 30 minutes before serving, and garnish with paprika.

Notes

You can add vegetables or proteins for variation. For a vegan version, substitute the mayo with vegan options and use tofu.
