Gluten-Free Roasted Apple & Butternut Squash Soup

A vibrant and nourishing soup that combines the sweet and earthy flavors of roasted apples and butternut squash, perfect for autumn.

Ingredients

  • 2 apples, cored and quartered
  • 3 cups cubed butternut squash
  • 1 onion, quartered
  • 3 cups gluten-free vegetable broth
  • 1 tsp cinnamon
  • 1 tbsp olive oil
  • Salt and pepper, to taste

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Toss the cubed butternut squash, quartered apples, and onion with olive oil, salt, and pepper on a large baking sheet.
  3. Roast for about 25-30 minutes, until tender and golden brown.
  4. Transfer the veggies into a blender with the vegetable broth and cinnamon, and blend until smooth.
  5. Heat the blended soup in a pot over medium heat until warmed through.
  6. Garnish with black pepper, olive oil, or toasted pumpkin seeds before serving.

Notes

For a richer soup, blend in coconut milk after blending. Adjust seasoning as desired.
