  • 49 Gluten Free Chocolate Vanilla Creme Cookies
  • 1/2 cup Unsalted Butter, melted
  • 32 ounces Cream Cheese, softened
  • 3/4 cup Granulated Sugar
  • 1 teaspoon Vanilla Extract
  • 8 ounces Whipped Topping

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Crush the gluten-free chocolate cookies in a large bowl until they resemble coarse crumbs.
  3. Mix the melted butter into the cookie crumbs until evenly coated.
  4. Press the cookie mixture into a greased 9-inch springform pan.
  5. Bake the crust for 10 minutes and let it cool.
  6. Beat the softened cream cheese in a mixing bowl until smooth and creamy.
  7. Add the granulated sugar and vanilla extract, mixing until combined.
  8. Fold in the whipped topping gently until well combined.
  9. Transfer the cheesecake filling over the cooled crust, smoothing the top.
  10. Bake for 50-60 minutes until the edges are set and the center jiggles slightly.
  11. Cool in the oven with the door cracked for about an hour, then refrigerate for at least 4 hours.
