Greek Chicken Salad with Tzatziki

A fresh and vibrant Greek Chicken Salad paired with a creamy tzatziki sauce, perfect for summer gatherings or a delightful weeknight dinner.

  • 2 boneless, skinless chicken breasts
  • 3 tablespoons olive oil
  • 2 tablespoons lemon juice
  • 1 teaspoon lemon zest
  • 2 cloves garlic, minced
  • 1 teaspoon dried oregano
  • 1 teaspoon paprika
  • 1 cup cucumber, grated and sliced (divided)
  • 1 cup Greek yogurt
  • 2 tablespoons fresh dill, chopped
  • 1/4 red onion, thinly sliced
  • 1 cup cherry tomatoes, halved
  • 1/3 cup Kalamata olives
  • 1/3 cup feta cheese, crumbled
  • 4 cups romaine or mixed greens

Instructions

  1. Marinate the chicken in a bowl with olive oil, lemon juice, lemon zest, garlic, oregano, and paprika for at least 30 minutes.
  2. Prepare the tzatziki sauce by mixing Greek yogurt, grated cucumber, dill, and a pinch of salt in another bowl.
  3. Cook the marinated chicken on a grill pan or skillet over medium-high heat for 6-7 minutes on each side.
  4. Assemble the salad by layering romaine or mixed greens, sliced chicken, cherry tomatoes, olives, red onion, and cucumber in a large bowl.
  5. Top with tzatziki sauce and garnish with fresh dill or parsley before serving.

Notes

For a heartier salad, consider adding quinoa or bulgur. You can also make it vegan by substituting chicken with grilled eggplant or tofu.
