Oeufs Mimosa for Halloween

A spooky twist on a classic deviled eggs recipe, perfect for Halloween gatherings.

  • 6 large eggs
  • 3 tablespoons mayonnaise
  • 1 teaspoon mustard
  • Salt and pepper to taste
  • Green food coloring (optional)
  • Black olives (for decoration)

Instructions

  1. Boil the eggs: Place your eggs in a saucepan and cover them with cold water. Turn the heat to medium-high and bring to a gentle boil, then cover and let sit for about 10-12 minutes.
  2. Cool the eggs: Transfer to a bowl of ice water for 5-10 minutes.
  3. Peel the eggs: Crack and peel under running water.
  4. Prepare the filling: Slice eggs in half, scoop out yolks, and mash them in a bowl. Add mayonnaise, mustard, salt, pepper, and optional food coloring.
  5. Fill the egg whites with the yolk mixture using a spoon or piping bag.
  6. Decorate for spookiness with sliced black olives.
  7. Chill and serve: Refrigerate for at least 30 minutes before serving on a festive platter.

Notes

These eggs can be made a day ahead and stored in the refrigerator. Substitute mayonnaise with Greek yogurt or avocado for healthier options.
