Halloween Jack-o’-Lantern Stuffed Peppers

Spooky stuffed peppers shaped like Jack-o’-lanterns filled with a delicious mixture of meat, rice, and spices, perfect for Halloween festivities.

  • 4 Bell Peppers (Orange and Yellow)
  • 1 lb Ground Meat (Beef, Turkey, or Vegetarian Alternative)
  • 1 cup Cooked Rice or Quinoa
  • 1 Onion, diced
  • 3 cloves Garlic, minced
  • 1 cup Tomato Sauce
  • Spices (Cumin, Paprika, Salt, Pepper)
  • Cheese (Optional)

Instructions

  1. Preheat your oven to 375°F (190°C). Cut the tops off the bell peppers and remove the seeds.
  2. Carve faces into the peppers to make them look like Jack-o’-lanterns.
  3. Heat a drizzle of olive oil in a skillet over medium heat. Add diced onions and sauté until translucent (about 5 minutes).
  4. Add minced garlic and cook for another minute.
  5. Add the ground meat to the skillet. Cook until browned (about 7-10 minutes).
  6. Stir in the cooked rice, tomato sauce, cumin, paprika, salt, and pepper.
  7. Spoon the filling into each carved pepper, pressing down gently to pack them in.
  8. Place the stuffed peppers in a baking dish, add a splash of water, cover with foil, and bake for 25 minutes.
  9. Remove the foil and sprinkle cheese on top if using, then bake for another 10-15 minutes.

Notes

You can customize the filling with beans, corn, or Italian sausage for different flavors.
