Witches’ Brew Soup and Creepy Ghost Bread

A whimsical Halloween-inspired soup and spooky bread that will enchant your guests during the season of magic.

Ingredients

  • 2 tablespoons olive oil
  • 1 onion, diced
  • 3 cloves garlic, minced
  • 3 carrots, diced
  • 2 celery stalks, diced
  • 1 zucchini, diced
  • 1 can (15 oz) diced tomatoes
  • 4 cups vegetable broth
  • 2 teaspoons dried thyme
  • 1 teaspoon smoked paprika
  • Salt and pepper to taste
  • 1 cup spinach or kale
  • Pumpkin seeds (optional)
  • 1 loaf of French or Italian bread
  • 1 cup ricotta cheese
  • ½ cup mozzarella cheese, shredded
  • Black olives (for eyes)

Instructions

  1. Sauté the olive oil and diced onion over medium heat until translucent, about 5 minutes.
  2. Add minced garlic and stir until fragrant, about 1 minute.
  3. Mix in the diced carrots and celery, cooking for 5–7 minutes, followed by zucchini for another 3 minutes.
  4. Sprinkle in dried thyme and smoked paprika, stirring to coat the veggies.
  5. Pour in the diced tomatoes and cook for 3–5 minutes.
  6. Add vegetable broth and bring to a simmer, cooking for about 20 minutes.
  7. Stir in spinach or kale and cook for another 5–7 minutes.
  8. Taste and adjust seasoning with salt and pepper.
  9. Preheat your oven to 350°F (175°C) while slicing the bread into thick slices.
  10. Spread the ricotta and mozzarella mixture onto the bread shapes and add olives for eyes.
  11. Bake for 10–15 minutes until the cheese is melted.
  12. Serve the soup in bowls with the ghost bread on the side.
