Sweet Potato Banana Bread

  • 3/4 cup cooked and mashed sweet potato
  • 3/4 cup mashed ripe banana
  • 1/4 cup maple syrup or honey
  • 1/4 cup melted coconut oil or avocado oil
  • 1 teaspoon apple cider vinegar
  • 2 teaspoons vanilla extract
  • 2 eggs
  • 1 1/2 cups whole wheat flour
  • 2 teaspoons cinnamon
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/3 cup chocolate chips

Instructions

  1. Preheat your oven to 350°F (175°C) and line a 9×5 loaf pan with parchment paper or grease it with oil.
  2. Mix the cooked, mashed sweet potato with the mashed banana in a large bowl until smooth.
  3. Add the maple syrup (or honey), melted coconut (or avocado) oil, apple cider vinegar, and vanilla extract. Mix in the eggs one at a time until combined.
  4. Sift together the whole wheat flour, cinnamon, baking powder, baking soda, and salt. Gradually add to the wet ingredients, folding gently.
  5. Fold in the chocolate chips until evenly distributed.
  6. Transfer the batter into the prepared loaf pan.
  7. Bake for 50-60 minutes until the top is golden and a toothpick comes out clean.
  8. Cool the bread in the pan for about 10 minutes before transferring it to a wire rack to cool completely before slicing.

Notes

For a vegan option, substitute eggs with applesauce or flax eggs. This bread can be frozen for up to 3 months.
