  • 1 cup mixed dried fruits (raisins, apricots, dates)
  • 1 cup mixed nuts (walnuts, almonds, hazelnuts)
  • 2 cups whole wheat flour
  • 1 teaspoon baking soda
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1/2 cup maple syrup or agave nectar
  • 1 cup almond milk (or any plant-based milk)
  • 1 teaspoon vanilla extract
  • 1 teaspoon cinnamon

Instructions

  1. Gather your ingredients and preheat your oven to 350°F (175°C). Line a loaf pan with parchment paper.
  2. Mix the dry ingredients: combine whole wheat flour, baking soda, baking powder, salt, and cinnamon in a large bowl.
  3. Combine the wet ingredients: mix almond milk, maple syrup, and vanilla extract in another bowl.
  4. Fold in the mixed dried fruits and nuts into the dry mixture.
  5. Create the batter by pouring the wet mixture into the dry mix and gently stir until just combined.
  6. Transfer the batter into the prepared loaf pan, smoothing the top if needed.
  7. Bake for about 45-55 minutes, or until a toothpick comes out clean.
  8. Cool the loaf in the pan for about 10 minutes before transferring to a wire rack to cool completely.

Notes

For added flavor, try different dried fruits or spices. Keep it nut-free by substituting nuts with seeds.
