Hearty Blueberry Protein Muffins

Nutritious and delicious muffins packed with protein and fiber, perfect for breakfast or a snack.

Ingredients

  • 1 cup rolled oats
  • 1 cup cottage cheese
  • 2 ripe bananas
  • 2 eggs
  • 1 teaspoon baking powder
  • 1 teaspoon vanilla extract
  • 1 cup fresh or frozen blueberries
  • 1/4 cup honey or maple syrup
  • A pinch of salt

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Prepare a 12-cup muffin tin with non-stick spray or liners.
  3. Blend the rolled oats, cottage cheese, bananas, eggs, baking powder, and vanilla extract until smooth.
  4. Add the honey or maple syrup and salt, then blend briefly.
  5. Fold in the blueberries gently with a spatula.
  6. Distribute the batter into the muffin cups, filling each about 3/4 full.
  7. Bake for 20 to 22 minutes, or until a toothpick comes out clean.
  8. Cool in the tin for 5 minutes, then transfer to a wire rack.
  9. Enjoy warm or store in an airtight container.

Notes

These muffins can be frozen for up to three months. Reheat in the microwave for a quick breakfast.
