1 lb boneless chicken thighs or breasts, cut into bite-sized pieces
2 tbsp olive oil
2 tbsp soy sauce
3 tbsp honey
Juice of 2 limes
2 cloves garlic, minced
½ tsp chili flakes (optional)
Salt & pepper to taste
For the Rice Stack:
2 cups cooked white or jasmine rice
1–2 ripe avocados, diced or sliced
1 tbsp chopped cilantro or parsley
Sesame seeds (optional garnish)
Lime wedges for serving
Marinate the chicken in honey, lime juice, soy sauce, garlic, salt, pepper, and chili flakes (if using) for at least 20 minutes.
Heat oil in a skillet over medium-high heat. Add chicken and cook until golden and caramelized, about 5–7 minutes per side.
Reduce any leftover marinade in the skillet for a sticky glaze.
Pack cooked rice into a small bowl or ramekin, then flip onto plate to form a stack.
Top rice with chicken, avocado, drizzle with sauce, and sprinkle with cilantro and sesame seeds.
