A delicious and easy weeknight meal featuring chicken thighs drizzled with a sweet honey and tangy Dijon mustard marinade.

  • 4 Chicken Thighs (bone-in, skin-on preferred)
  • 3 Tablespoons Honey
  • 3 Tablespoons Dijon Mustard
  • 2 Garlic Cloves, Minced
  • 2 Tablespoons Olive Oil
  • 1 Teaspoon Salt
  • 1/2 Teaspoon Black Pepper
  • 1/2 Teaspoon Paprika
  • 1 Tablespoon Fresh Thyme or Parsley (optional)

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Combine the honey, Dijon mustard, minced garlic, olive oil, salt, black pepper, and paprika in a medium bowl to make the marinade.
  3. Pat the chicken thighs dry with paper towels and place them in a baking dish.
  4. Pour the marinade over the chicken, ensuring each piece is well-coated.
  5. Marinate for at least 30 minutes, or up to 24 hours in the fridge for intensified flavors.
  6. Bake for 35-40 minutes until the chicken’s internal temperature reaches 165°F (74°C).
  7. Broil for the last 2-3 minutes for extra crispiness.
  8. Let the chicken rest for 5-10 minutes before serving.
