Hubby’s Favorite Salad

A delightful salad that even the most salad-averse folks will love, featuring crispy bacon, creamy avocado, and a zesty dressing.

  • 4 cups Mixed Greens
  • 4 slices Crispy Bacon
  • 1 large Avocado
  • 1 cup Cherry Tomatoes
  • 1 medium Cucumber
  • 1/4 medium Red Onion
  • 1/2 cup Feta Cheese
  • 1/4 cup Olive Oil
  • 2 tablespoons Lemon Juice
  • 1 teaspoon Honey

Instructions

  1. Fry up the bacon: Start by cooking the bacon in a skillet over medium heat until it’s crispy (5-7 minutes). Transfer the bacon to a paper towel-lined plate to absorb excess grease.
  2. Prep the veggies: While the bacon is sizzling, wash and dry the mixed greens, slice the cucumber, halve the cherry tomatoes, and dice the avocado.
  3. Make the dressing: In a small bowl, combine olive oil, lemon juice, honey, and a pinch of salt and pepper. Whisk until emulsified.
  4. Combine everything: In a large bowl, toss together the mixed greens, tomatoes, cucumber, avocado, and crumbled bacon.
  5. Drizzle with dressing: Just before serving, drizzle the fresh dressing over your salad and gently toss to combine.
  6. Plate and serve: Transfer to a serving bowl or individual plates, crumble the remaining bacon and feta on top, and enjoy!

Notes

For a healthier alternative, use turkey bacon or smoked almonds. This salad can also be a side dish for grilled meats.
