Italian Bruschetta

A delightful Italian appetizer made with fresh tomatoes and basil on toasted bread.

Ingredients

  • 4 cups tomatoes (diced or quartered)
  • 1/2 cup red onion (diced)
  • 2 cloves garlic (minced)
  • 1/4 cup olive oil (divided)
  • 8 leaves fresh basil (chopped or thinly sliced)
  • 1/2 teaspoon coarse salt
  • Black pepper (to taste)
  • 1 large baguette (sliced)
  • 1 tablespoon balsamic reduction (optional, for garnish)

Instructions

  1. Start with toasting your baguette. Preheat your oven to 400°F (200°C). Slice your baguette diagonally into 1/2-inch thick pieces. Spread them out on a baking sheet and drizzle some olive oil over the top. Bake for 5-7 minutes until they’re lightly golden and deliciously crispy.
  2. Prepare the topping by adding diced tomatoes to a large mixing bowl. Toss in diced red onion and minced garlic, gently stirring to combine.
  3. Season the mixture by drizzling in about 2 tablespoons of olive oil, adding chopped basil, coarse salt, and a sprinkle of black pepper. Adjust seasoning as needed.
  4. Let it marinate for at least 10-15 minutes.
  5. Assemble the bruschetta by spooning a generous amount of the mixture onto each toasted slice.
  6. Garnish with a drizzle of balsamic reduction and a few basil leaves on top for that extra pop of color.
