  • 2 cups water or vegetable broth
  • 1 cup cherry tomatoes, halved
  • 1 cucumber, diced
  • 1 bell pepper, diced
  • 1/2 red onion, finely chopped
  • 1/2 cup Kalamata olives, sliced
  • 1/4 cup feta cheese, crumbled
  • 1/4 cup fresh parsley, chopped
  • 3 tablespoons olive oil
  • 2 tablespoons red wine vinegar
  • Salt and pepper to taste

Instructions

  1. Cook the Orzo: In a medium saucepan, bring 2 cups of water or vegetable broth to a gentle boil. Add your 1 cup of orzo pasta and cook according to package instructions, usually around 7-10 minutes. Drain and rinse under cold water.
  2. Prepare the Veggies: While the orzo is cooking, slice and dice the cherry tomatoes, cucumber, bell pepper, and finely chop the red onion.
  3. Assemble the Salad: In a large bowl, combine the cooked and cooled orzo, halved cherry tomatoes, diced cucumber, bell pepper, and chopped red onion. Add sliced Kalamata olives and crumbled feta cheese, followed by fresh parsley.
  4. Dress It Up: In a small bowl, whisk together the olive oil, red wine vinegar, salt, and pepper. Pour the dressing over the salad and toss gently.
  5. Chill and Serve: Let the salad chill in the refrigerator for at least 30 minutes before serving. Give it a toss before serving.
