Pumpkin Chocolate Chip Monster Cupcakes

  • 15 oz can Pumpkin Puree
  • 2 cups All-Purpose Flour
  • 1 cup Granulated Sugar
  • 1 cup Brown Sugar, packed
  • 2 large Eggs
  • 1 teaspoon Baking Powder
  • 1 teaspoon Cinnamon
  • 1/2 teaspoon Sea Salt
  • 1/2 cup Butter, melted
  • 1 cup Chocolate Chips

Instructions

  1. Preheat your oven to 350°F (175°C). Line your muffin tin with fun Halloween-themed cupcake liners.
  2. Mix the dry ingredients in a large mixing bowl: whisk together the all-purpose flour, baking powder, cinnamon, and sea salt.
  3. Combine wet ingredients by beating the eggs, pumpkin puree, granulated sugar, brown sugar, and melted butter in another bowl.
  4. Combine the dry mixture with the wet mixture, stirring gently to mix. Fold in chocolate chips last.
  5. Fill the cupcake liners about 2/3 full with batter and bake for about 18-20 minutes, or until a toothpick comes out clean.
  6. Cool the cupcakes completely on a wire rack before frosting.
  7. Decorate the cupcakes with icing and creative candy garnishes like Gummy Worms and pretzel sticks.
  8. Serve on a spooky platter and delight the kids!
