Lemon Kale Caesar Salad

A zesty twist on the classic Caesar salad featuring nutrient-packed kale and a bright lemon dressing.

Ingredients

  • 4 cups kale, chopped
  • 1 cup romaine lettuce, chopped
  • 1/2 cup Caesar dressing
  • 1/4 cup grated Parmesan cheese
  • 1/2 cup croutons
  • 1 lemon, juiced
  • Salt and pepper to taste
  • Grilled chicken, steak, or shrimp (optional)

Instructions

  1. Prep Your Greens: Wash your kale and romaine lettuce thoroughly. Chop into bite-sized pieces.
  2. Massage the Kale: Place chopped kale in a bowl, drizzle with olive oil, sprinkle with salt, and massage for a couple of minutes.
  3. Mix the Greens: Combine massaged kale and chopped romaine in a large bowl. Toss until evenly mixed.
  4. Add the Dressing: Drizzle half of the Caesar dressing over the greens and toss well.
  5. Cheese, Please: Sprinkle grated Parmesan over the salad and toss again.
  6. Lemon Zest: Squeeze in fresh lemon juice, season with salt and pepper, and toss to combine.
  7. Crispy Croutons: Add croutons and give it one last gentle mix. Add optional protein if desired.

Notes

Serve with lemon wedges and consider topping with extra Parmesan for added flavor.
