Low-Glycemic Apple Walnut Spinach Salad

A light and nutritious salad combining baby spinach, crisp apples, and toasted walnuts, dressed with olive oil and lemon juice.

Ingredients

Scale
  • 6 cups baby spinach
  • 1 apple, thinly sliced
  • 1/4 cup walnuts, toasted
  • 2 tbsp olive oil
  • 1 tbsp lemon juice
  • Salt and pepper, to taste

Instructions

  1. Prepare the Spinach: Wash the baby spinach thoroughly. Use a salad spinner to remove excess water.
  2. Slice the Apple: Thinly slice the fresh apple, leaving the skin on if desired.
  3. Toast the Walnuts: In a skillet over medium heat, add walnuts, stirring for about 3-5 minutes until golden brown.
  4. Make the Dressing: Whisk together olive oil and lemon juice in a small bowl, adding salt and pepper to taste.
  5. Assemble the Salad: Combine spinach, sliced apples, and toasted walnuts in a bowl, drizzle with dressing, and toss gently.
  6. Add Final Touches: Taste and adjust seasoning as needed, topping with cheese if desired.

Notes

For meal prep, store the dressing separately until serving to avoid wilting the spinach.
