Mary Berry’s Irish Soda Bread

A warm, comforting Irish soda bread recipe inspired by Mary Berry, perfect for creating memories around the table.

Ingredients

  • 3⅓ cups (450g) all-purpose flour
  • 1 level tsp baking soda
  • 1 level tsp salt
  • 4 tbsp (55g) cold butter
  • 1¼ cups (300ml) buttermilk or soured milk

Instructions

  1. Preheat the oven to 425°F (220°C).
  2. Mix the all-purpose flour, baking soda, and salt in a large mixing bowl.
  3. Add the cold butter cut into small chunks and rub into the flour until it resembles fine breadcrumbs.
  4. Pour in the buttermilk and gently stir until the mixture comes together.
  5. Knead the dough lightly on a floured surface just a couple of times.
  6. Shape the dough into a round, about 1½ inches thick, and place on a baking tray lined with parchment paper.
  7. Cut a deep cross into the top of the loaf.
  8. Bake in the preheated oven for 30-35 minutes until golden brown and hollow when tapped.
  9. Cool on a wire rack before slicing.

Notes

Serve warm with butter or alongside hearty soups. Variations can include adding herbs, cheese, or dried fruits.
