  • 1 can Chickpeas, rinsed
  • 1 Cucumber, diced
  • 1 cup Cherry Tomatoes, halved
  • 1 Red Onion, diced
  • 1/2 cup Feta Cheese, crumbled
  • 1/4 cup Fresh Parsley, chopped
  • 2 tbsp Lemon Juice, freshly squeezed
  • 3 tbsp Olive Oil
  • Salt & Pepper, to taste

Instructions

  1. Chop the Veggies: Dice the cucumber, red onion, and cherry tomatoes into bite-sized pieces.
  2. Rinse the Chickpeas: Rinse canned chickpeas under cold water to remove excess sodium.
  3. Combine Ingredients: In a large mixing bowl, toss together the chickpeas, cucumber, tomatoes, and onion. Add parsley and crumble feta cheese on top.
  4. Make the Dressing: In a small bowl, whisk olive oil and lemon juice; season with salt and pepper.
  5. Dress the Salad: Drizzle the dressing over the salad and toss gently.
  6. Chill: Let the salad sit in the fridge for at least 30 minutes before serving.
  7. Serve: Enjoy on its own or with greens, grilled chicken, or fish.
