Apple & Roasted Beet Salad

A vibrant salad featuring roasted beets, crisp apples, and creamy goat cheese, all tossed with a balsamic dressing.

Ingredients

  • 3 beets, roasted and sliced
  • 1 apple, thinly sliced
  • 4 cups arugula
  • 1/4 cup goat cheese, crumbled
  • 2 tbsp olive oil
  • 1 tbsp balsamic vinegar

Instructions

  1. Preheat your oven to 400°F (200°C). Wrap each beet individually in aluminum foil and place on a baking sheet. Roast for about 45-60 minutes until tender. Let cool slightly before peeling.
  2. Core and slice the apple thinly, tossing with lemon juice if desired.
  3. Rinse arugula and spin dry, then place in a large serving bowl.
  4. Whisk together olive oil and balsamic vinegar in a small bowl.
  5. Layer the roasted beets, apple slices, and goat cheese over the arugula. Drizzle with dressing and toss gently.
  6. Serve in a beautiful bowl or individual portions, and enjoy!

Notes

For extra crunch, garnish with toasted walnuts or pecans. A sprinkle of fresh herbs like parsley or basil adds a lovely touch.
