Refreshing Kiwi Lemonade

A refreshing and vibrant drink perfect for summer, made with ripe kiwis and tangy lemons.

  • 4 ripe kiwis, peeled and sliced
  • 2 lemons, juiced
  • 4 cups cold water
  • 3 tablespoons honey or sugar (adjust to taste)
  • Ice cubes
  • Fresh mint leaves for garnish (optional)
  • Lemon slices for garnish (optional)

Instructions

  1. Prepare the Kiwis: Start by peeling and slicing your kiwis. To easily peel them, use a sharp knife to cut off both ends and then slide the knife along the curve of the fruit to remove the skin. Be careful—kiwis can be slippery! Once peeled, slice them into rounds, and set them aside.
  2. Juice the Lemons: Next, cut your lemons in half and juice them. A citrus juicer or squeezer works like a charm here, but if you don’t have one, you can use a fork to help extract the juice. Just make sure to remove any seeds that sneak in!
  3. Blend it Up: In a blender, combine the sliced kiwis with the freshly squeezed lemon juice, and add about 1 cup of the cold water. Blending the kiwis helps to release their juices and creates that beautiful, vibrant green mixture. Blend until smooth—about 30 seconds should do the trick!
  4. Strain the Mixture: If you prefer a smoother drink, you can strain the kiwi mixture through a fine-mesh sieve into a bowl or pitcher to remove any pulp or seeds. If you love the texture (I know I do!), you can skip this step and keep it as is!
  5. Mix it Up: Next, add the remaining cold water and sweetener of choice (honey or sugar) directly to the pitcher with the pureed kiwi mixture. Stir gently to combine. Taste it and adjust the sweetness to your liking—this is your drink, after all!
  6. Chill it Down: For the best flavor, let your Kiwi Lemonade chill in the refrigerator for at least 30 minutes. This step allows the flavors to meld beautifully. If you’re in a hurry, you can just add ice directly to your glasses.
  7. Serve with Style: When you’re ready to serve, fill a glass with ice cubes, pour the refreshing Kiwi Lemonade over, and garnish with mint leaves and lemon slices for that extra touch of summer magic!

Notes

Feel free to adjust the sweetness and swap ingredients as desired. This lemonade can be made a day in advance and stored in the refrigerator.
