Skinny Poolside Dip

A light, creamy, and flavorful dip perfect for summer gatherings by the pool.

  • 8 oz cream cheese, softened
  • 1 packet dry ranch dressing mix
  • 1 can corn, drained
  • 1 small can black olives, diced and drained
  • 1 cup red bell pepper, finely diced
  • 4 oz green chilis, drained
  • 1 jalapeño, finely diced

Instructions

  1. Prepare your ingredients: Make sure the cream cheese is at room temperature; finely dice the red bell pepper and jalapeño, and drain the corn and olives.
  2. Mix the cream cheese and ranch: In a mixing bowl, combine the softened cream cheese and dry ranch dressing mix until smooth and creamy (about 1-2 minutes).
  3. Fold in the veggies: Add corn, diced bell pepper, green chilis, and black olives, folding gently.
  4. Add the jalapeño: Stir in diced jalapeño according to your spice preference.
  5. Chill before serving: Cover and refrigerate for at least 1 hour.
  6. Serve and enjoy: Transfer to a serving bowl and garnish as desired. Serve with tortilla chips or veggies.
