Caprese Bruschetta

A fresh and vibrant appetizer that combines crispy crostini with juicy tomatoes, fresh mozzarella, and fragrant basil.

Ingredients

  • Crispy Crostini (1 baguette or gluten-free bread)
  • Fresh Mozzarella Cheese (8 oz, bocconcini)
  • Tomatoes (2 cups, diced, heirloom or cherry)
  • Fresh Basil Leaves (1 cup, torn)
  • Balsamic Glaze (to drizzle)
  • Olive Oil (3 tablespoons)
  • Salt (to taste)
  • Pepper (to taste)

Instructions

  1. Preheat your oven to 400°F (200°C). Slice your bread into ½-inch thick pieces. Arrange them on a baking sheet and brush both sides lightly with olive oil. Season with salt and pepper.
  2. Bake for about 8-10 minutes until they are toasted and lightly golden, flipping halfway through.
  3. Dice your fresh tomatoes into small pieces and transfer them into a mixing bowl.
  4. Tear the fresh basil leaves and toss them into the bowl with the tomatoes.
  5. Add olive oil to the tomato-basil mixture and season with salt and pepper. Gently mix together.
  6. Assemble the crostini by piling the tomato-basil mixture on top of each toasted bread slice.
  7. Top each piece with a slice of fresh mozzarella.
  8. Drizzle with balsamic glaze before serving.
  9. Finish with a little more olive oil and a sprinkle of sea salt.

Notes

Can prepare the toppings ahead of time and store them in the fridge. Serve immediately to keep crostini crispy.
