  • 2 pounds ripe figs, chopped
  • 1 cup granulated sugar
  • 1/4 cup lemon juice
  • 1/4 cup water
  • 1 teaspoon vanilla extract

Instructions

  1. Prep your ingredients: Wash your figs under cool running water, dry them, remove the stems, and chop them into small bits.
  2. Combine in a pot: In a large pot, combine the chopped figs, granulated sugar, lemon juice, and water. Stir to combine.
  3. Cook the mixture: Set the pot over medium heat and let it cook, stirring occasionally to prevent sticking for about 20-30 minutes.
  4. Check the consistency: After about 30 minutes, check the thickness of the jam. Let it simmer for another 5-10 minutes if needed.
  5. Add the final touches: Stir in the vanilla extract once you’re happy with the jam’s consistency.
  6. Cool and store: Remove the pot from heat, let the jam cool slightly, then spoon it into clean, sterilized jars. Store in the fridge.

Notes

If your jam isn’t thickening, try simmering longer or adding pectin. Can be made with fresh or frozen figs.
