Gluten-Free Apple & Kale Harvest Salad

A refreshing and vibrant salad featuring massaged kale, crisp apples, chewy cranberries, and crunchy pumpkin seeds, all drizzled with a zesty dressing.

  • 4 cups chopped kale, massaged
  • 1 apple, thinly sliced
  • 1/4 cup dried cranberries
  • 1/4 cup pumpkin seeds
  • 2 tbsp olive oil
  • 1 tbsp apple cider vinegar
  • 1 tsp maple syrup

Instructions

  1. Prep Your Kale: Start with the kale. Remove the stems and chop the leaves into bite-sized pieces. Place them in a large bowl. Now, add a sprinkle of salt and a drizzle of olive oil. Massage the kale for about 2-3 minutes until the leaves are tender and vibrant.
  2. Slice the Apple: Next, grab your apple. Using a sharp knife, thinly slice the apple and toss it into your massaged kale. To prevent browning, you can drizzle a bit of lemon juice over the slices.
  3. Add the Cranberries and Seeds: Sprinkle the dried cranberries and pumpkin seeds over the salad. If you want to elevate the nuttiness, you could even toast the seeds lightly before adding them.
  4. Make the Dressing: In a small bowl, whisk together the olive oil, apple cider vinegar, and maple syrup. Taste it and adjust as needed.
  5. Combine Everything: Drizzle your dressing over the kale and other ingredients, then toss everything together gently.
  6. Serve Fresh: This salad is best enjoyed right after it’s made. If you need to prepare it in advance, add the dressing just before serving.

Notes

For a perfect presentation, serve in a large bowl with fresh herbs and additional pumpkin seeds on top. Pair with grilled chicken or enjoy on its own.
