GF Apple Walnut Chicken Salad

A refreshing chicken salad with crispy apples, crunchy walnuts, and creamy Greek yogurt, perfect for a light lunch or picnic.

Ingredients

Scale
  • 2 cups cooked shredded chicken
  • 1 apple, diced
  • 1/2 cup walnuts, chopped
  • 1/3 cup plain Greek yogurt
  • 1 tbsp Dijon mustard
  • 1 tbsp lemon juice
  • 2 celery stalks, diced
  • Salt and pepper to taste

Instructions

  1. Prep your ingredients: Gather all your ingredients—this makes the process a breeze!
  2. Cook the chicken: Poach or roast chicken, season and cook until fully cooked through (about 165°F).
  3. Chop the veggies and fruits: Dice the apple, celery, and walnuts into bite-sized pieces.
  4. Mix everything together: In a large bowl, combine chicken, apple, celery, walnuts, Greek yogurt, Dijon mustard, lemon juice, salt, and pepper.
  5. Stir gently: Use a spatula to gently mix everything until well combined.
  6. Taste and adjust: Add more lemon juice or mustard if needed for tang, or more yogurt for creaminess.
  7. Chill for best flavor: Let the salad chill in the fridge for about 30 minutes.
  8. Serve up: Give it a quick stir before serving on mixed greens, in wraps, or scooped into avocado halves.

Notes

For a sweeter touch, add dried cranberries or swap out apples for seasonal fruits like grapes or pears.
