Gooey Banana Bread Cinnamon Rolls

  • 1/4 cup melted butter
  • 1/2 cup brown sugar
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda

  • 1 cup all-purpose flour
  • 1 teaspoon ground cinnamon
  • 1/4 cup brown sugar (for filling)
  • 1/2 teaspoon ground cinnamon (for filling)
  • 1/2 cup cream cheese (for frosting)
  • 1/4 cup butter (for frosting)
  • 1 cup powdered sugar (for frosting)
  • 1 tablespoon milk (for frosting)
  • 1/2 cup brown sugar (for caramel sauce)
  • 2 tablespoons butter (for caramel sauce)
  • 1 tablespoon cream (for caramel sauce)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Mash the bananas in a large bowl until smooth with a few lumps.
  3. Mix the melted butter, brown sugar, and vanilla extract into the mashed bananas.
  4. Combine the baking powder, baking soda, salt, and flour in another bowl. Gradually fold this into the banana mixture until just combined.
  5. Prepare the filling by mixing the brown sugar and ground cinnamon in a small bowl.
  6. Roll out the dough on a floured surface into a rectangle, about 1/2 inch thick.
  7. Spread the cinnamon sugar mixture evenly over the rolled-out dough.
  8. Roll the dough into a log starting from one long edge.
  9. Slice the log into 1-inch thick pieces and arrange them in a greased baking dish.
  10. Bake in the oven for 20-25 minutes, or until golden brown.
  11. Make the frosting by beating together the cream cheese and butter until smooth, then mixing in the powdered sugar and milk.
  12. Prepare the caramel sauce by combining brown sugar, butter, and cream in a saucepan over medium heat until bubbling.
  13. Frost the rolls with cream cheese frosting and drizzle caramel sauce over the top.

Notes

Best served warm with a cup of coffee or tea. Can be made ahead and refrigerated or frozen.
