Vegan Apple Butternut Squash Chili

A heartwarming and nourishing chili with a twist of apples and butternut squash, perfect for chilly evenings.

  • 2 cups cubed butternut squash
  • 1 apple, diced
  • 1 can black beans
  • 1 can kidney beans
  • 1 can diced tomatoes
  • 1 onion, diced
  • 2 tsp chili powder
  • 1 tsp cumin

Instructions

  1. Prep your ingredients: peel and cube the butternut squash, dice the apple, and chop the onion.
  2. Heat a drizzle of olive oil in a large pot over medium heat and sauté the onion until translucent.
  3. Add the butternut squash and diced apple, stirring for about 5-7 minutes.
  4. Sprinkle in the chili powder and cumin, stirring well to coat.
  5. Mix in the diced tomatoes and beans, stirring thoroughly.
  6. Simmer with added water or vegetable broth for 20-30 minutes.
  7. Taste and adjust seasoning with salt, pepper, and cayenne if desired.
  8. Serve in bowls topped with fresh cilantro or avocado.

Notes
