The Ultimate Patty Melt with Secret Sauce

  • 2 tsp Worcestershire sauce
  • 1 tsp kosher salt
  • 1/2 tsp ground black pepper
  • 12 slices sourdough bread
  • 1/2 cup secret sauce
  • 3 medium Vidalia onions, thinly sliced
  • 6 slices Cheddar cheese
  • 8 tbsp unsalted butter
  • Secret Sauce Ingredients:
  • 1/4 cup Dijon mustard
  • 1/4 cup mayonnaise
  • 1 tbsp barbecue sauce
  • 1/2 tsp hot sauce

Instructions

  1. Prep the onions: Heat a large skillet over medium heat and add 1 tablespoon of butter. Add sliced onions and sauté for 15-20 minutes until golden brown.
  2. Make the patties: In a bowl, combine ground beef, Worcestershire sauce, kosher salt, and black pepper. Mix gently and divide into four equal portions, shaping each into a patty.
  3. Cook the patties: Increase heat to medium-high, add another tablespoon of butter, and cook the patties for 3-4 minutes on each side. Top each with a slice of cheese during the last minute.
  4. Prepare the bread: Spread butter on one side of each slice of sourdough bread and heat another skillet or griddle over medium heat.
  5. Assemble the patty melts: On unbuttered side of one slice, spread secret sauce, top with a patty, caramelized onions, and another slice of bread, buttered side up.
  6. Grill to golden perfection: Cook for 3-4 minutes on each side until golden brown and cheese is melted.
  7. Serve and savor: Let them rest for a minute before slicing in half and enjoy!

Notes
