One-Pot Tex-Mex Chili

A comforting one-pot Tex-Mex chili, perfect for cozy nights and easy weeknight meals.

  • Leftover hamburgers or fresh ground beef
  • 1 can of kidney beans
  • 1 can of black beans
  • 1 can of diced tomatoes
  • 1 onion, chopped
  • 2 cloves of garlic, minced
  • 1 tablespoon chili powder
  • 1 teaspoon cumin
  • 1 bell pepper, chopped
  • Salt and pepper to taste
  • 2 cups of beef broth

Instructions

  1. Heat the pot: Start by placing a large pot or Dutch oven over medium heat. Add a splash of olive oil and let it warm up for a minute or two.
  2. Sauté the aromatics: Toss in the chopped onion and bell pepper. Sauté until the onions turn translucent and the bell pepper softens, about 5–7 minutes. Stir in the minced garlic and cook for another minute until fragrant.
  3. Brown the meat: If you’re using fresh ground beef, add it to the pot. Break it up with a spatula and cook until browned. If you’re using leftover hamburgers, crumble them directly into the pot. Stir well to combine!
  4. Add the spices: Sprinkle in the chili powder, cumin, salt, and pepper. Stir well to coat the meat and vegetables in the spices. Cook for about 2 minutes.
  5. Throw in the beans and tomatoes: Pour in the kidney beans, black beans, and diced tomatoes (with their juices). Give everything a good stir to combine.
  6. Pour in the broth: Add the beef broth to the pot and give it a gentle stir. Bring to a boil, then reduce heat and let it simmer for about 30 minutes.
  7. Taste and adjust: After simmering, taste your chili and add more salt, pepper, or spices as needed. For more heat, toss in crushed red pepper flakes or hot sauce.
  8. Serve it up: Once you’ve reached your desired consistency, remove from heat and prepare to serve!

Notes

Serve with fresh cilantro, sour cream, and avocado for a delightful garnish. Enjoy with tortilla chips or a warm baguette.
