Tomato and Basil Balsamic Bruschetta

  • 2 cups ripe tomatoes, diced
  • 1/4 cup fresh basil, chopped
  • 2 tablespoons balsamic vinegar

Instructions

  1. Prep your bread: Slice the baguette into 1/2-inch thick slices and lay them on a baking sheet.
  2. Toast the bread: Preheat your oven to 400°F (200°C). Brush each slice lightly with olive oil and toast for about 5-7 minutes until golden brown and crispy.
  3. Mix the tomato topping: In a bowl, combine the diced tomatoes, chopped basil, minced garlic, balsamic vinegar, and a drizzle of olive oil. Stir until well combined and season with salt and pepper.
  4. Let it marinate: Allow the mixture to rest for about 10 minutes to let the flavors meld.
  5. Assemble the bruschetta: Spoon the tomato mixture generously onto each toasted bread slice.
  6. Garnish and serve: Top with freshly grated Parmesan cheese if desired and serve immediately while warm.
