Tomato Pie

A comforting and nostalgic dish that features layers of juicy tomatoes, creamy mayo, and a delightful crust, perfect for gatherings and cozy dinners.

  • 1 pie crust
  • 4 beefsteak tomatoes (peeled and sliced thin)
  • Salt and pepper (to taste)
  • 1 tbsp fresh basil (or 1 tsp dried basil)
  • 2 tbsp chopped chives
  • 1 cup heavy mayo (preferably Duke’s)
  • 1 cup grated cheddar cheese

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Prepare the pie crust and fit it into a pie dish.
  3. Pre-bake the crust for about 10 minutes.
  4. Peel and slice the beefsteak tomatoes thinly.
  5. Season those tomatoes with salt and pepper and let sit for 10-15 minutes.
  6. Combine the mayonnaise, fresh basil, chopped chives, and cheddar cheese in a mixing bowl.
  7. Layer the tomatoes in the prepared crust with seasoning between layers.
  8. Spread half of the mayo mixture over the first layer of tomatoes.
  9. Repeat with another layer of tomatoes and top with remaining mayo mixture.
  10. Bake in the oven for about 30-35 minutes.
  11. Allow the pie to cool for 10-15 minutes before slicing.

Notes

Serve warm, garnished with fresh chives or basil. Pairs well with a mixed greens salad.
