  • 1 apple, sliced
  • 2 cups broccoli florets
  • 2 tbsp soy sauce
  • 1 tbsp maple syrup
  • 1 tbsp sesame oil
  • 1 clove garlic, minced

Instructions

  1. Prep your ingredients: Start by cubing the tempeh into bite-sized pieces and slicing the apple thinly. If desired, marinate the tempeh in a little soy sauce and maple syrup.
  2. Heat your pan: Grab your skillet or wok and heat it over medium-high heat. Add the sesame oil until it shimmers.
  3. Cook the tempeh: Add the cubed tempeh and cook for 5-7 minutes until golden brown, avoiding overcrowding the pan.
  4. Add garlic: Once browned, toss in minced garlic and stir for about 30 seconds until fragrant.
  5. Toss in broccoli: Add broccoli florets and stir-fry for about 3-4 minutes until vibrant and crunchy.
  6. Add apples: Toss in sliced apples and cook for another 2-3 minutes until slightly softened.
  7. Finish with soy sauce and maple: Drizzle in soy sauce and maple syrup, stirring to combine and cook for an additional minute.

Notes

Serve over brown rice or quinoa for a heartier meal. Top with sesame seeds and scallions for extra texture and flavor.
