Moelleux à la Crème de Marrons

A delightful French dessert featuring a rich and moist cake infused with the sweet flavor of chestnut cream.

  • 100 g of Butter
  • 500 g of Crème de Marrons (chestnut cream)
  • 4 Eggs (separated)
  • 3 tablespoons of sifted Flour
  • Pinch of Salt

Instructions

  1. Preheat the oven to 180°C (350°F).
  2. Prepare an 8-inch (20 cm) round cake pan by greasing it with butter or lining it with parchment paper.
  3. Melt the butter in a small saucepan over low heat until just melted.
  4. Whip together the egg yolks and crème de marrons in a mixing bowl until smooth.
  5. Mix in the sifted flour until just incorporated.
  6. Incorporate the melted butter and mix until just combined.
  7. Beat the egg whites in a clean bowl with a pinch of salt until stiff peaks form.
  8. Fold the beaten egg whites into the batter gently using a spatula.
  9. Pour the batter into the prepared cake pan and smooth the top.
  10. Bake for 25-30 minutes or until a toothpick inserted into the center comes out clean.
  11. Cool the cake in the pan for about 10 minutes before transferring to a wire rack to cool completely.

Notes

For serving, dust with powdered sugar, add whipped cream or vanilla ice cream, and consider toasted chestnuts for garnish.
