Apple Caramel Cheesecake

A creamy cheesecake layered with caramelized apples on a crispy biscuit base, topped with a buttery crumble.

  • 200g Digestive Biscuits
  • 100g Unsalted Butter, melted
  • 500g Cream Cheese
  • 150g Sugar
  • 3 Eggs
  • 200g Caramelized Apples
  • 1 teaspoon Vanilla Extract
  • 150ml Sour Cream
  • 1 teaspoon Cinnamon
  • 100g Flour
  • 50g Butter
  • 50g Sugar

Instructions

  1. Preheat your oven to 160°C (320°F).
  2. Make the biscuit base by crushing the digestive biscuits and mixing with melted butter, then press into a springform pan.
  3. Prepare the cheesecake mixture by beating together cream cheese and sugar, then adding eggs, vanilla, sour cream, and cinnamon.
  4. Caramelize the apples in a skillet until soft and golden, then let cool slightly.
  5. Combine the caramelized apples with the cheesecake mixture and pour over the crust.
  6. Bake for 50-60 minutes until the center is set but slightly jiggly.
  7. Cool in the oven with the door ajar for one hour, then refrigerate for at least 4 hours or overnight.
  8. Make the crumble by mixing flour, butter, and sugar until crumbly, then bake until golden.

Notes

Serve with whipped cream or vanilla ice cream for an extra touch of indulgence.
