No-Bake Strawberry Cheesecake Cups

Delightful no-bake strawberry cheesecake cups that are easy to prepare and perfect for summer gatherings.

  • 1 ½ cups Graham cracker crumbs (About 1012 crackers)
  • 3 tbsp Granulated sugar
  • 5 tbsp Butter, melted (Unsalted)
  • 16 oz Cream cheese, softened (2 packages)
  • ¾ cup Powdered sugar
  • 1 tsp Vanilla extract
  • 1 cup Heavy whipping cream (Cold)
  • 2 cups Strawberries, diced (Fresh and ripe)
  • 2 tbsp Granulated sugar (Optional)
  • 1 tsp Lemon juice
  • Whipped cream (For garnish)
  • Strawberries, sliced (For garnish)
  • Graham cracker crumbs (Optional crunch)

Instructions

  1. Prepare the crust: In a mixing bowl, combine the graham cracker crumbs, sugar, and melted butter. Mix it well until all the crumbs are coated and they resemble wet sand.
  2. Make the cheesecake filling: In another bowl, using an electric mixer, beat the softened cream cheese until it’s smooth and creamy. Add in the powdered sugar and vanilla extract — mix until fully integrated.
  3. Whip the cream: In a separate bowl, pour in the cold heavy whipping cream and whip it until soft peaks form. Gently fold this whipped cream into your cream cheese mixture until well combined.
  4. Add the strawberries: In a small bowl, toss together the diced strawberries, lemon juice, and optional granulated sugar. Let them sit for a few minutes.
  5. Assemble: Layer the cheesecake mixture over the graham cracker crust in each cup, add sweetened strawberries, and finish with a dollop of whipped cream and graham cracker crumbs.

Notes

These cheesecake cups can be made a day in advance and kept in the refrigerator for up to 3 days. Be sure to add garnishes just before serving.
