  • 3 medium Ripe Bananas
  • 1 cup Grated Carrots
  • ¾ cup Granulated Sugar
  • ¼ cup Brown Sugar
  • 2 large Eggs
  • ½ cup Vegetable Oil or Melted Coconut Oil
  • 1 teaspoon Vanilla Extract
  • 1 ½ cups All-Purpose Flour
  • 1 teaspoon Baking Soda
  • ½ teaspoon Baking Powder
  • 1 teaspoon Cinnamon
  • ½ teaspoon Nutmeg
  • ¼ teaspoon Ginger
  • ½ teaspoon Salt
  • Optional: ½ cup Walnuts or pecans, chopped
  • Optional: ½ cup Raisins or shredded coconut

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Prepare your 9×5-inch loaf pan by lightly greasing it or lining with parchment paper.
  3. Mash the ripe bananas in a large mixing bowl until smooth with a few chunks remaining.
  4. Whisk in granulated and brown sugars, then add eggs and mix until smooth.
  5. Add vegetable oil and vanilla extract, mixing until well combined.
  6. Grate the fresh carrots into fine shreds.
  7. Combine dry ingredients (flour, baking soda, baking powder, spices, salt) in a bowl.
  8. Mix the dry ingredients into the wet mixture gently.
  9. Add grated carrots and mix-ins, stirring until just combined.
  10. Pour the batter into the prepared loaf pan.
  11. Bake for 55-65 minutes, or until a toothpick comes out clean.
  12. Cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
