Chocolate Zucchini Bread

A rich and moist chocolate zucchini bread that’s sure to delight even the pickiest eaters.

  • 1 cup grated zucchini
  • 1 cup all-purpose flour
  • 1/2 cup cocoa powder
  • 1/2 cup granulated sugar
  • 1/2 cup brown sugar
  • 1/2 cup vegetable oil
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1/2 cup chocolate chips (optional)

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Prepare a 9×5-inch loaf pan by greasing it and dusting with flour.
  3. Grate the zucchini and squeeze out excess moisture.
  4. Mix the dry ingredients: flour, cocoa powder, baking soda, baking powder, and salt.
  5. Mix the wet ingredients: granulated sugar, brown sugar, oil, eggs, and vanilla extract until combined.
  6. Combine the dry and wet ingredients, stirring gently until just combined.
  7. Fold in the zucchini and chocolate chips.
  8. Pour the batter into the prepared pan.
  9. Bake for 50-60 minutes or until a toothpick comes out clean.
  10. Cool the bread in the pan for 10 minutes, then transfer to a wire rack to cool completely.

Notes

Serve warm with butter or chocolate ganache. For variations, consider adding nuts, cinnamon, or using pumpkin puree.
