Cinnamon Roll Cake

A delightful cake that bridges breakfast and dessert with layers of cinnamon and sugar, topped with a creamy glaze.

  • 1 cup granulated sugar
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1 cup milk
  • 1/2 cup unsalted butter, melted
  • 2 large eggs
  • 1 tablespoon vanilla extract
  • 1 tablespoon ground cinnamon
  • 1/2 cup brown sugar
  • 1 cup powdered sugar
  • 2 tablespoons milk (for icing)
  • 1/2 teaspoon vanilla extract (for icing)

Instructions

  1. Preheat your oven: Set your oven to 350°F (175°C).
  2. Prepare your baking dish: Grease a 9×13 inch baking pan with butter or non-stick cooking spray.
  3. Mix dry ingredients: In a large mixing bowl, whisk together the flour, baking powder, salt, and granulated sugar until well combined.
  4. Combine wet ingredients: In a separate bowl, whisk together the milk, melted butter, eggs, and vanilla extract.
  5. Bring it all together: Slowly pour the wet ingredients into the dry ingredients and mix until just combined.
  6. Prepare the cinnamon filling: In a small bowl, mix the brown sugar and cinnamon together.
  7. Assemble the cake: Pour half of the cake batter into your prepared pan, sprinkle with the cinnamon-sugar mixture, then pour the remaining batter.
  8. Swirl it!: Use a toothpick or butter knife to gently swirl the batter and cinnamon mixture.
  9. Bake: Place the cake in the preheated oven and bake for 25-30 minutes.
  10. Cool and glaze: Allow the cake to cool for 10-15 minutes then drizzle with the glaze made from powdered sugar, milk, and vanilla extract.

Notes

For an extra decadent treat, serve warm with whipped cream or vanilla ice cream.
