Gluten-Free Cinnamon Coffee Cake

  • 1/2 cup salted butter, softened
  • 2/3 cup applesauce
  • 2 eggs
  • 1 cup white sugar
  • 2 tsp vanilla extract
  • 1 cup almond flour
  • 1 1/4 cup oat flour
  • 2 tsp baking powder
  • 1/4 tsp salt
  • 2 tbsp salted butter, melted (for topping)
  • 1 tbsp oat flour (for topping)
  • 2 tbsp white sugar (for topping)
  • 1/2 tbsp cinnamon (for topping)
  • 1/4 cup salted butter, slightly softened (for topping)
  • 1/4 cup light brown sugar (for topping)
  • 1/4 cup almond flour (for topping)
  • 1/2 cup oat flour (for topping)
  • 2 tsp cinnamon (for topping)

Instructions

  1. Preheat your oven to 350°F (175°C) and grease your pan.
  2. Mix the wet ingredients: butter, applesauce, eggs, sugar, and vanilla until fluffy.
  3. Combine the dry ingredients in a separate bowl: almond flour, oat flour, baking powder, and salt.
  4. Mix the dry ingredients into the wet ingredients gently.
  5. Prepare the topping by mixing melted butter, oat flour, sugar, and cinnamon.
  6. Layer half of the batter in the pan, sprinkle half of the topping, then layer the remaining batter and topping.
  7. Bake for 30-35 minutes or until a toothpick comes out clean.
  8. Cool in the pan for 10 minutes before transferring to a wire rack.

Notes

Serve warm, optionally dusted with powdered sugar. Great with coffee or tea.
